Green Yellow
Is there much of a taste difference between baked/roasted green, yellow, and red peppers?
My mom wants me to make her stuffed peppers, and she likes green peppers but I like red peppers; I’ve never had red or yellow peppers raw but I’ve had green peppers raw and it was gross. However, I like roasted/sauted red peppers.

Yes, there is a definite taste difference in the different colour peppers, when cooked. At least to my taste buds. I don’t like green peppers cooked, but I LOVE red peppers, raw, sauteed, roasted, any way… Orange and yellow peppers also taste different from red or green.( I like both the orange and the yellow’s too, its really only green I dont like much – I think it has a bitter aftertaste) They have a slightly sweeter taste to them. Why not make some of each colour? Then, at the very least, you’ll learn how each taste and what you like and dont like.
