german shepherd rescue

We are looking to adopt a German shepherd rescue. They have 2 that we like, but can not decide.?
One of them is 1 year and has a layer of color beautiful and tan. The other is black (mostly black, with legs so), seems to have a short coat and large ears. One of his ears are up, the other has its day:). What I wonder is: 1) German shepherd puppies to grow in size in the ear or will always be the ears? 2) I've heard that more tan German shepherds as they grow, since only 6 months of age, color change of the layer with or without a "set"?
